abstract (57) [Summary] [Objective] To provide a method for producing a fiber-enriched coffee product having a high content of soluble dietary fiber. A soluble fiber having a molecular weight of at least about 100,000 daltons of at least 30% by weight, based on the total dry weight of spent coffee grounds and soluble solids, of partially extracted roast and ground coffee.
