abstract | (57) [Summary] [Purpose] It is an object of the present invention to provide a method for rapidly quantifying the content of histamine, which is a measure of freshness of food. [Constitution] A test solution is injected into a reaction cell 1 and the amount of dissolved oxygen (DO) is recorded by a recorder 9 via an oxygen sensor 7 and an amplifier 8 and then an enzyme reagent having histamine oxidase activity is added to the reaction cell. The concentration of histamine is quantified by the microcomputer 10 based on the amount of the decrease in the amount of dissolved oxygen, which is recorded in the recorder 9. |
