abstract (57) [Summary] [Structure] β-1,3-glucan was obtained from the filamentous fungus of the genus Colletotrichum by a general isolation method and inactivated by β-1,3-glucanase treatment. And a novel polysaccharide M-6013 substance having an activity of suppressing deterioration in freshness of damaged plants, and, for example, Choletotrichum fragalier M-6013 (FERM P- 12625) and a method for producing a polysaccharide M-6013 substance using a filamentous fungus of the genus Choletotrichum. [Effect] The polysaccharide M-6013 substance of the present invention has an inhibitory effect on aging that suppresses browning and softening of plant tissues caused by damage such as cutting, and is useful as a freshness-retaining agent for plants by using this substance.
