(57) [Summary] [Structure] A microorganism belonging to the genus Sterigmatomyces, the genus Rhodotorula, the genus Silobasidium or the genus Lipomyces and having the ability to produce galactooligosaccharides from lactose has an amino nitrogen content of 0.01%. It is cultivated in a liquid medium containing lactose which is the following and is supplemented with iron ion, copper ion or zinc ion, and galacto-oligosaccharide is produced and accumulated in the culture solution, or the grown bacterial cells are lactose or lactose in an aqueous medium. It acts on the inclusions to produce and accumulate galactooligosaccharides. [Effect] By the method of the present invention, galacto-oligosaccharide can be produced from lactose or a lactose-containing material with high accumulation, high yield and high purity. |
