abstract (57) [Summary] [Objective] Phenyl aldehydes suitable for perfuming foods or various products are obtained by the enzymatic action of lipoxidase. Construction A compound of formula I below or a tautomer of formula I is converted to a phenylaldehyde compound of formula II below in the presence of lipoxidase. [Chemical 1] In formula I, R 1 is H, OH, OCH 3 or C 1-4 alkyl, and R 3 is H, OH, OCH 3 or C 1-4 Alkyl, R 2 is H, C 1-6 alkyl, —C H 2 OH, -COOH, -OCH 3 , -CH 2 O-R 4 (Wherein R 4 is a benzoyl group or a C 1-4 alkanoyl group) or a —CO—CH 2 —CO— (I) group which connects two residues represented by the formula I. [Chemical 2] In Formula II, R 1 and R 3 are the same as R 1 and R 3 in Formula I above.
