(57) [Summary] [Structure] When culturing a lipase-containing microorganism, glyceride or a fatty acid as a lipase inducer is added to the culture solution at the beginning of the culture or at a concentration of 1 to 80% by weight in the culture solution. It is a dried microbial cell that is obtained by adding the microorganism during culture, washing the obtained microorganism with a water-soluble solvent, and then drying it so that the water content becomes 1 to 20% by weight. [Effects] The dried microbial cell of the present invention enables efficient transesterification of fats and oils with a faster reaction rate and a stable and long-lasting reaction. |
