abstract (57) [Abstract] [Structure] The present invention provides a method for measuring the antioxidant activity of a sample, which comprises a reaction solution containing bacteria, an alkyl peroxide and an iron complex compound, and a sample to be measured. It is a method for measuring antioxidant activity, characterized in that the radical scavenging activity is quantified by measuring the number of surviving bacteria in the reaction solution. [Effect] Since no special analytical equipment or special reagent is required, most facilities can easily and highly reliably measure the antioxidant activity. In addition, since the operation is simple and incubation is sufficient in a short time, It is possible to measure multiple samples at once.
