titleOfInvention | Method for producing proteinaceous composition |
abstract | (57) [Summary] [Purpose] A protein capable of introducing a sufficient amount of amino acid into a raw material protein, and capable of reliably and efficiently introducing an amino acid having a low introduction rate into the raw material protein. A method for producing such a composition is provided. [Structure] A solution to which a raw material protein, at least one amino acid ester and a proteolytic enzyme are added, salts are added to the solution, and the amino acid in the amino acid ester is added to the protein by a plastein reaction. A method for producing a proteinaceous composition to be introduced. |
