abstract (57) [Summary] [Object] An object of the present invention is to provide a novel powdered vinegar having a mild and light acidity and flavor, and also having a physical condition adjusting function. [Structure] The present invention is a vinegar which is alcohol-fermented / acetic acid-fermented using a branched oligosaccharide-containing saccharide, or an acetic acid-fermented vinegar obtained by adding alcohol to a branched oligosaccharide-containing saccharide. It is a novel powdered vinegar obtained by adding and dissolving a powdered base material, or by adding and dissolving a powdered base material composed of a branched oligosaccharide-containing saccharide to alcohol vinegar and spray-drying. [Effect] Since the powdered vinegar of the present invention is mainly composed of branched oligosaccharides, in addition to the various effects as vinegar, it also has a high content of branched oligosaccharides, and can be used in a wide variety of fields having physical conditioning functionality. ..
