abstract | PURPOSE: To obtain baked potato powder giving a mixed food having good taste and biological regulation function when mixed with various foods or food additives by crushing raw potato in the form of fine granules, filtering the crushed potato, heating and baking the filtrate and crushing the baked product. n CONSTITUTION: Potato A is washed with water in a water tank 11 and the bud is removed by a bud-removing means 2. The potato is cut with a cutting means 3, crushed with a mixer 41 of a finely dividing means 4 and filtered with a filtering means 5. The filtrate is passed through a heating oven 61 of a heating means 6 to evaporate water. The starch particles of the product are solidified in sintered state with a baking oven 71 of a baking means 7, cooled with a cooling means 8 and passed through a peeling means 9 to peel the solid product. The obtained block of starch particle is stored in a recess 92.
