abstract PURPOSE: To obtain the subject glycoside improved in stability and water solubility by treating a quercetin with a specific enzyme in the presence of lactose, etc. n CONSTITUTION: A quercetin glycoside such as rutin, isoquercetin or peltatoside is treated with β-galactoside (e.g. BIOLACTA G-10) in an amount of 10-2,000 units per g of the substrate 1 and with glucose transferase such as cyclodextrin glucano transferase originated from Bacillus macelans in an amount of 10-2,000 units per g of the substrate in the coexistence of 1-80wt.% of a galactose source such as lactose or galacto-oligosaccharide, a glucose source such as starch and, if necessary, 0,1-500ppm of Mg 2+ , etc., at a pH of 2-9 at 20-70°C.
