abstract | PURPOSE: To obtain the subject oil, excellent in rich taste and useful for the field of foods by adding and mixing respective specific amounts of reducing sugar and water with dairy product powder, heat-treating the resultant mixture, then dipping the heat-treated mixture in fats and oils, treating the mixture under specified conditions and removing solid substances. n CONSTITUTION: The objective oil is obtained by adding and mixing 1-20 pts. wt. reducing sugar (e.g. glucose) with 100 pts.wt. dairy product powder (e.g. whole milk powder), heat-treating the resultant mixture in the presence of 1-15wt.% water at preferably 70-120°C, dipping the resultant heat-treated sugar- dairy product powder in fats and oils (e.g. rapeseed oil), heat-treating the powder at 90-150°C temperature under a reduced pressure of ≤60mmHg vacuum decree and subsequently removing solid substances. n COPYRIGHT: (C)1992,JPO&Japio |
