abstract | PURPOSE: To obtain an antioxidant, composed of an unsaponified rice bran oil, whole tocopherols, a synergist and kojic acid, having excellent antioxidizing effects and useful for fats and oils used in foods such as food raw materials, processed foods and cooked foods. n CONSTITUTION: The objective antioxidant containing (A) unsaponified rice bran oil, (B) α- to δ-tocopherols (mixture), (C) a synergist composed of citric acid, (iso)ascorbic acid (salt or ester), phosphoric acid, condensed phosphate (lecithin, etc.), cephalin, tartaric acid, etc., and (D) kojic acid. The ratio of the component (D) to the total weight of the components (A) to (C) is preferably 0.5-20.
