abstract PURPOSE: To provide a drink compounded with a large amount of dietary fiber composed mainly of glucomannan without lowering the high fluidity of the drink and the characteristic palatability of the drink. n CONSTITUTION: Irreversibly heat-coagulated material composed mainly of glucomannan is cut with a blade to small cubes containing ≥90wt.% fraction passing through a 160 Tyler mesh sieve and neutralized with an acid.
