abstract | PURPOSE: To deposit α-L-aspartyl-L-phenylalanine methyl ester (α-APM) crystals excellent in operating efficiency and filterability from an acid addition salt of the α-APM in high yield. n CONSTITUTION: An acid addition salt of α-APM is dissolved or suspended in an aqueous medium at ≤50°C so as to provide ≥3% concentration thereof and the resultant solution is kept as an acidic solution at pH ≤3 (solution A). On the other hand, a solution at pH ≥3 containing or without containing the α-APM is prepared as a solution (B) and the aforementioned solution (A) is slowly mixed therewith while stirring the solution (B). The mixture solution is then kept at ≤40°C temperature and the pH of the mixture solution is kept at ≥3 while adding, as necessary, a basic substance.
