PURPOSE: To inexpensively and simply obtain a sugar cake of melon having flavor of various fruits and vegetables, being to everyone's taste, comprising a melon as a raw material. n CONSTITUTION: Raw material melons such as KOSHIURI(e.g. oriental pickling melon or KATAURI), balsam pear or chayote are selected, cleaned, the cores are removed, the raw material melons are immersed in 15-25% saccharide solution (e.g. sugar or glucose), then further boiled in a highly concentrated saccharide solution (40-60 %) containing acidic seasoning (preferably 0.1-1.0% citric acid) and optionally various kinds of fruits and vegetable puree, provided with honey in a netlike container, dried by a vacuum dryer and formed to give the objective sugar cake. n COPYRIGHT: (C)1992,JPO&Japio |
