abstract PURPOSE: To provide a fermented milk with a suppressed rise in acidity during preservation and transportation. n CONSTITUTION: The aforementioned method is a method for producing a fermented milk as follows. A lactic acid bacterium, belonging to Lactococcus lactis subsp. lactis and capable of producing nisin, together with a lactic acid bacterium used for producing the fermented milk, is employed and inoculated into a raw material milk to carry out fermentation. As a result, the nisin is gradually produced and accumulated during the fermentation. Lactic acid bacilli participating in production of acids is prevented from growing by the nisin to suppress production of the acids during preservation and transportation. n COPYRIGHT: (C)1992,JPO&Japio
