abstract PURPOSE: To obtain the subject β-glucooligosaccharide capable of applying to a vehicle, a food material, etc., in a high accumulation state and in a high yield by acting a specified microorganism on cellobiose, gentiobiose or a mate rial containing the said substance. n CONSTITUTION: A β-glucooligosaccharide-producing microorganism (e.g. Sterigmatomyces eliviae CBS 8119) belonging to Sterigmatomyces genus, Rhodotorula genus, Shirobasidium genus, Bullera genus, Lipomyces genus or Cryptococcus genus is acted on cellobiose, gentiobiose or a material containing the said substance and the produced β-glucooligosaccharide is collected.
