abstract | PURPOSE: To obtain the subject noncarious yoghurt, having hardly any acid taste and excellent in flavor by producing theanderose from a glucan and sucrose with an enzyme derived from the genus Mucor and including the resultant theanderose therein. n CONSTITUTION: The objective yoghurt is obtained by producing theanderose expressed by the formula from a glucan and sucrose using a glucosyltransferase derived from the genus Mucor, adding the theanderose in an amount of 1-15g/dl expressed in terms of concentration in a yoghurt thereto and adding a concentrated fruit juice such as grapefruit or strawberry or a dried and powdery substance such as fruit or pericarp in an amount of 1-50g/dl expressed in terms of concentration in the yoghurt as other additives thereto. n COPYRIGHT: (C)1992,JPO&Japio |
