titleOfInvention Method for removing cholesterin or cholesterin ester from yolk
abstract PURPOSE: To remove cholesterin from a yolk under mild conditions in treatment at a low cost without deteriorating the quality of the yolk by separating yolk plasma and an LDL-granular fraction from the yolk and removing cholesterin and cholesterin ester in the yolk plasma by adsorption on a solid adsorbent. CONSTITUTION: Yolk plasma and an LDL-granular fraction are separated from a yolk optionally after an emulsification inhibitor, preferably water is added to the yolk. Cholesterin and cholesterin ester contained in the yolk plasma are adsorbed on a solid adsorbent, preferably β-cyclodextrin. The solid adsorbent with adsorbed cholesterin and/or cholesterin ester is separated from the liq. plasma phase and this phase is optionally combined again with the granular fraction.
