abstract PURPOSE: To obtain an odorless and water-soluble sweetener useful as foods, medicines, etc., without bitterness and astringency by extracting Stevia rebaudiana Bertoni and using the resultant specific glycoside as an active ingredient. n CONSTITUTION: A glycoside substance Z, obtained by extraction from Stevia rebaudiana Bertoni and having a specific optical rotatory activity; [α] 24 D=-22° (C=0.2/methanol) and [α] 25 D=-29.4° (C=0.6/pyridine) and the melting point; 240-242°C is used as a sweetener for foods and medicines.
