abstract PURPOSE: To efficiently produce L-tyrosine by adding phenol to L- or DL-serine and subjecting phenol to enzymatic reaction therewith in the presence of β- tyrosinase-containing bacterium cell previously treated with an organic solvent. n CONSTITUTION: β-Tyrosinase-containing bacterium cell or treated material thereof is suspended in a mixture of an organic solvent such as acetone, ethanol or methanol and aqueous solution and the resultant suspension is allowed to stand or slowly stirred at about 4-20°C for about 30min to 2hr. β-Tyrosinase- containing bacterium cell previously treated with the organic solvent thus is subjected to enzymatic reaction with phenol and L- or DL-serine or phenol and pyruvic acid or salt thereof and ammonia or salt thereof. Production of L-tyrosine from pyruvic acid proceeds efficiently and L-tyrosine can be produced in high yield in the above-mentioned reaction. n COPYRIGHT: (C)1991,JPO&Japio
