abstract | PURPOSE: To highly accelerate the browning of a food by subjecting the food to the browning reaction in the presence of nucleic acid or a substance relating thereto. n CONSTITUTION: When a food is colored by a browning reaction, the browning reaction is performed in the presence of ribonucleic acid or a substance relating thereto consisting of deoxyribonucleic acid, a hydrolyzate thereof, such as inosine-5'-monophosphoric acid or guanosine-5'-monophosphoric acid, a saccharide phosphoric acid ester or cytosine, thereby permitting to highly accelerate the browning reaction, to reduce the amount of a reaction substrate when the reaction substrate is added to the reaction solution, and to relax the temperature and/or time of the reaction among the heating conditions. n COPYRIGHT: (C)1991,JPO&Japio |
