abstract PURPOSE: To obtain a rice-bonding oil uniformly dispersing and adsorbing on rice when adding during the boiling and having excellent tractability by mixing edible oils and fats with lecithin and other surfactant for food and further a fatty acid ester of ascorbic acid. n CONSTITUTION: 0.1-5wt.% lecithin, 0.01-3wt.% one or more surfactants for food except lecithin such as a glycerin fatty acid ester, a sorbitan fatty acid ester and a fatty acid ester of cane sugar and 0.005-0.05wt.% fatty acid ester of ascorbic acid such as L-ascorbic acid stearate are added to edible oils and fats and dissolved. n COPYRIGHT: (C)1991,JPO&Japio
