abstract PURPOSE: To readily obtain the subject compound useful as a diet sweetener in high yield by bringing a mineral acid salt or organic sulfonic acid salt of α-L-aspartyl-L-phenylalanine methyl ester into contact with a specific exchange resin in an aqueous medium. n CONSTITUTION: For example, a mineral acid salt or organic sulfonic acid salt of α-L-aspartyl-L-phenylalanine methyl ester is reacted with ≥0.5 equiv. (expressed in terms of exchange capacity in a wet state based on the total amount of free acids contained in the aforementioned mineral acid salt or organic sulfonic acid salt) weak basic or strong basic OH type anion exchange resin in water or a hydrous organic solvent (e.g. methanol) preferably at 0-70°C while being stirred, then filtered and concentrated to afford the objective compound. n COPYRIGHT: (C)1991,JPO&Japio
