abstract | PURPOSE: To suppress reversal reaction by glucoamylase and further to increase yield of glucose in saccharifying starch or a derivative thereof with glucoamylase, by adding mutarotase to a reaction system. n CONSTITUTION: Mutarotase (classified into enzyme number: EC5.1.3.3) obtained from glucoamylase used in saccharification of starch, swine kidney or Guinea pepper is immobilized to a proper carrier such as chitin or chitosan and used for a reactor in enzyme immobilized type. Then a starch hydrolyzate having at least 30wt.% dried solid content is made to flow in the reactor and saccharified to give glucose. The purity of the enzyme in the operation is sufficiently so as, not to influence on the saccharification reaction and the enzyme can optionally be mixed with a stabilizer.
