abstract PURPOSE: To produce a compound useful as a functional low-caloric saccharide substitute by reacting a D-aldohexose substrate compound containing a specific enzyme with formaldehyde and a prescribed base and then crystallizing the resultant compound. n CONSTITUTION: (A) An aqueous solution, having (a) preferably pH 6-8 and 1 to about 50°C temperature and containing (i) 1-50% D-aldohexose substrate compound or a mixture of the D-aldohexose substrate compound and (ii) the D-aldohexose; oxygen 6-oxidoreductase enzyme which is preferably a galactose oxidase as an enzyme having 1,000-1,000,000 units activity based on 1 mol D- aldohexose substrate compound is reacted under stirring and (b) the solution obtained in the step (a) is then reacted with 1-40 mol equiv. formaldehyde and 1-13 mol equiv. base selected from NaOH, Ca(OH) 2 , KOH and a mixture thereof at 15-40°C temperature and pH 12-13 to provide an aqueous solution. (c) The resultant aqueous solution is then preferably dehydrated and subsequently crystallized to provide the objective 5-C-hydroxymethylaldohexose substrate compound. n COPYRIGHT: (C)1990,JPO
