abstract PURPOSE: To obtain an antimicrobial substance useful as food preservative, fermentation adjuster, etc., having antimicrobial activity against Escherichia coli, Staphylococcus aureus, penicillium, etc., comprising an extracted component of adlay sprouts as a main component. n CONSTITUTION: Ground adlay sprouts are extracted with a solvent such as alcohol and then filtered to give an extracted solution to give an extracted solution, which is used as a main component of antimicrobial substance. The adlay sprouts, for example, are obtained by immersing adlay seeds in water for 24 hours, taking out, germinating and growing in a dark chamber at about 20°C for 10-50 days while proper water.
