abstract PURPOSE: To obtain the title enzyme inexpensively on an industrial scale by aerobically culturing a bacterium in a medium containing an L-glutamate, etc., at specific two-stage temperatures. n CONSTITUTION: A bacterium [preferably recombinant derived from Escherichia coli K-12 strain containing gene of phenylalanine dehydrogenase derived from Sporosarcina ureae] is aerobically cultured in a medium containing an L- glutamate or L-glutamic acid at two-stage temperatures by dropping 37°C to 30°C to give the aimed enzyme.
