abstract PURPOSE: To provide the subject water-insoluble composite material composed of tea polyphenol and protein, keeping the characteristic properties of tea polyphenol such as antioxidation activity and antitumor activity, usable in large quantity in a stable state and giving little astringency to the palate. n CONSTITUTION: The objective composite material is produced by compounding (A) a tea polyphenol (preferably tea catechin) and (B) a protein (preferably a water-soluble protein such as egg albumin) at a weight ratio (A:B) of (1-2):(10-1). The composite material can be obtained e.g. by mixing an aqueous solution of a tea polyphenol with an aqueous solution of a protein, leaving the mixture at rest and collecting the produced precipitate. n COPYRIGHT: (C)1990,JPO&Japio
