titleOfInvention Emulsifying method for fat/oil
abstract PURPOSE: To obtain an emulsified product of fat/oil having a neutral and stable pH by using a specified polyvinyl pyrrolidone in combination with a specified proportion of natural bentonite or synthetic hectorite. n CONSTITUTION: Oil/fat in 7-100 pts.wt. is added to 100 pts.wt. aq. soln. contg. 1-6wt.% polyvinyl pyrrolidone whose 1wt.% aq. solution has ≥35 relative viscosity at 25°C, and the mixture is dispersed uniformly with an emulsifier. Thereafter, the product is further emulsified by adding powdery bentonite and/or hectorite in such a proportion that the amt. of the bentonite and/or hectorite is ≥2wt.% basing on the amt. of the aq. phase and the sum of the polyvinyl pyrrolidone, bentonite, and hectorite basing on the amt. of the aq. phase is 5-12wt.%. Further, 1-10wt.% aq. soln. of an acid is added to the emulsified product of the oil/ fat, to adjust thus the pH of the emulsified product to 8.8, pref. ≤8.5.
