abstract |
PURPOSE: To provide the title preservative capable of effectively sterilizing and preserving foods without giving astringency, consisting of a combination of chitosan and yeast extract. n CONSTITUTION: Chitosan (e.g., 20000-40000 in average molecular weight) is dispersed in water followed by adding acetic acid to the resultant solution while stirring to prepare a chitosan aqueous solution.
