abstract | PURPOSE: To obtain a composition for the oral cavity, containing an extract prepared by extracting husks of cacao with a polar solvent and having safety and good tastiness with effective inhibitory action on formation of bacterial plaques. n CONSTITUTION: Husks of cacao formed as a by-product in a process for producing cocoa powder, chocolate, etc., are extracted with a polar solvent, preferably alkaline polar solvent, hydrous acetone or alkaline hydrous acetone at ambient temperature-refluxing temperature of the solvent for 0.5-5hr. The solvent is then distilled from the resultant extract solution to afford an inhibitory substance for formation of bacterial plaques as a solid substance. The above- mentioned extract is capable of remarkably inhibiting synthesis of glucan by glucosyltransferase derived from Streptococcus mutans, preventing polysaccharides having sticking tackiness from forming in the oral cavity and directly dispersing the polysaccharides in food from the oral cavity. n COPYRIGHT: (C)1989,JPO&Japio |
