titleOfInvention Measurement of freshness and measuring kit used therefor
abstract PURPOSE: To readily and quickly measure freshness of fishes and shellfishes by individually decomposing a test sample containing ATP-related compound and a sample containing inosine and hypoxanthine, contacting with test piece containing specific color former and comparing the both after the color is developed. n CONSTITUTION: A test sample containing ATP-related compound is neutralized with neutralizing agent containing 4-aminoantipyrine (A reagent) and a fixed amount of said neutralized test sample is reacted with an enzyme (B reagent) decomposing ATP-related compound such as alkali phosphatase to hydrogen peroxide and uric acid, then the reacted liquid is contacted with a test piece in which N-ethyl-N-sulfobutyl-m-toluidine is impregnated and the test piece is developed of color. On the other hand, a fixed amount of the neutralized test sample is reacted with an enzyme (C reagent) decomposing inosine and hypoxanthine to hydrogen peroxide and uric acid and contacted with a test piece.
