abstract | PURPOSE: To decrease the amount of a sucrose fatty acid ester used in the above composition and to improve the machine productivity, texture and palatability of the composition, by using a fatty acid monoglyceride, a propylene glycol ester of a fatty acid and an organic aid glycerol fatty acid ester in combination. n CONSTITUTION: The objective composition can be produced by compounding (A) 5-10 pts.wt. of a 16-18C saturated fatty acid monoglyceride having a fatty acid salt content of ≤0.1wt.% and a 18C saturated acid monoglyceride content of ≥80wt.%, (B) 0.1-3 pts.wt. of a sucrose fatty acid ester (preferably having an HLB of 9-13), (C) 3-8 pts.wt. of a propylene glycol ester of a 16-20C saturated fatty acid, (D) 1-4 pts.wt. of an organic acid glycerol fatty acid ester (e.g., citric acid monoglyceride), (E) 10-40 pts.wt. of edible fats and oils (e.g., liquid oil such as rapeseed oil and soybean oil), (F) 40-80 pts.wt. of an aqueous solution of a polyhydric alcohol (e.g, an aqueous solution of sorbitol, glycerol, etc.) and, as necessary, (G) 0.01-0.2 pts.wt. of a citric acid salt (the sum of A-G is 100 pts.wt.). n COPYRIGHT: (C)1989,JPO&Japio |
