abstract PURPOSE: To obtain the title composition having enhanced shelf stability of nutrient composition without requiring any antioxidant or deoxidizing agent, by adding lecithin having high physiological effect at a specific amount to a composition containing a polyvalent unsaturated acid such as eicosapentanoic acid and vitamin A. n CONSTITUTION: Lecithin containing ≥80wt.% acetone insoluble substance and at least 5wt.% phosphatidylethanolamine is added to a composition (e.g., sardine oil or oil Oenothera tetraptera) containing at least one kind of polyvalent unsaturated acids selected from a group consisting of eicosapentanoic acid, docosahexaenoic acid, octadecatrienoic acid and ester thereof and vitamin A at an amount of 0W150000IU at an amount of 0.1W30 pts.wt., preferably 2W20 pts.wt. based on 100 pts.wt. oil-soluble ingredient in the above-mentioned composition.
