abstract PURPOSE: To produce a polypeptide having mutarotase activity by forming a recombinant DNA sequence encoding a polypeptide that includes a structure gene from the genome of a mutarotase-producing microorganism. n CONSTITUTION: A recombinant DNA coding a polypeptide having the biological activity of mutarotase is prepared that contains the structure gene from the genome of a mutarotase-producing microorganism, the initiation point of a tetracycline repressor gene as the transcription start and the PL promoter. Escherichia coli or the like is transformed with one or more of these recombinant DNA molecules and the transformant is cultured in an enriched culture medium. The produced polypeptide is isolated to give a polypeptide having the biological activity of mutarotase.
