abstract | An inexpensive and efficient method and apparatus for producing a fermented product derived from a foliage of a grass family plant are provided. The present invention relates to a method for producing a fermented product derived from a foliage of a gramineous plant, wherein the foliage of the gramineous plant includes at least a stem top of the stem, and (A) water is added to the foliage of the gramineous plant. Adding a liquid, squeezing, separating the squeezed liquid and solids, (B) adding a catalyst to the separated solids and hydrolyzing, (C) the squeezed liquid and the above Mixing the hydrolyzate obtained in step (B) and saccharifying with an enzyme; and (D) fermenting the saccharified solution obtained in step (C) with a microorganism.
