abstract | <P>PROBLEM TO BE SOLVED: To provide a method for efficiently producing low molecular chondroitin sulfate. <P>SOLUTION: Raw material chondroitin sulfate is fermented with Koji mold in a state containing a mineral and then, the chondroitin sulfate is mixed with an organic acid and the mixture is aged. Specifically, a mineral is added to the raw material chondroitin sulfate having about 400,000-800,000 molecular weight and the material is boiled with clean water in a prescribed amount to sterilize the chondroitin sulfate and Koji mold, yeast, citric acid bacterium, lactic acid bacterium, acetic acid bacterium or Koji mold containing a fiber degradative enzyme each alone or a mixture of these two or more organisms are added thereto and the chondroitin sulfate is fermented and further, an organic acid having a carboxyl group, e.g. citric acid, lactic acid, acetic acid or tartaric acid or malic acid or a mixture of these two or more of organic acids are mixed with the fermented chondroitin sulfate and the mixture is retained at a prescribed temperature and aged and then filtered and extracted.
