PURPOSE:To obtain the title mixture useful as a nutrition feeding agent, having improved bitterness, smell and taste and excellent flavor and palatability by subjecting animal protein to enzymolysis with endoprotease and exoprotease in an aqueous system in a neutral range and treating the resulting substance with an adsorbent. CONSTITUTION:Animal protein (e.g. casein or soybean protein) is subjected to enzymolysis with endoprotease and exoprotease in an aqueous system in a neutral range, treated with an adsorbent, optionally concentrated and dried to give the objective mixture having 200-5,000 average molecular weight, comprising <=35wt.% free amino acid, having a molar ratio of (branched chain amino acid/aromatic amino acid) of >=7 and, in total amino acid composition, 15-25wt.% branched chain amino acid, 0.1-2.5wt.% aromatic amino acid and 0.5-1.5wt.% methionine. |
