Meat analogues and meat analogue extruders and methods |
abstract |
Meat analogues may include macrostructures of shear fibers connected parallel to each other and gaps placed between the shear fibers. The macrostructure may include meat or vegetable protein. The extrusion system may include an extruder and a die. The extrusion system can produce meat analogues. Meat analogues may contain animal protein. The extruder may be connectable to the die. The extrusion system can be configured to guide the material containing the animal protein from the extruder to the die through a fluid path extending through the die. The die may be configured to inject a fat or fat analog into the material, and when the fat or fat analog and material exit the die, the fat or fat analog is a material containing animal protein. Although embedded in the material, it is visually distinguished from the material. [Selection diagram] Fig. 6 |
