abstract [PROBLEMS] To provide a novel fungal strain capable of producing fish flakes from which suitable aromatic components can be obtained, and to provide moldy fish flakes using the strain. [Solution] The present invention forms a colony on MY20 medium, the center of which is yellow to orange, the periphery of which is pale yellow, and contains spherical to subglobular ascospores of yellow to orange color. The present invention provides a novel fungal strain Eurotium rubrum YM-1478 (Deposit No. NITE P-03338) belonging to the species Eurotium rubrum, a type of drought-resistant fungal strain, which forms spherical ascopods of the genus Eurotium.
