titleOfInvention Taste detection method, taste substance detection agent, taste substance detection agent complex and detection device
abstract PROBLEM TO BE SOLVED: To provide a method for detecting taste, which enables evaluation of taste by a method different from the conventional electrochemical method. SOLUTION: A sample containing a taste substance X and a taste substance detection agent Y are mixed to obtain a measurement sample, and light that changes due to the coexistence of the taste substance detection agent and the taste substance with respect to the measurement sample. Includes detecting and associating that detection with the taste of the measurement sample. The taste substance may be any one or more selected from the group consisting of polyphenols, amino acids, nucleotides, and xanthines. [Selection diagram] Fig. 2
