PROBLEM TO BE SOLVED: To provide a method for producing dietary fiber which has a mild sweetness with reduced sugars and provides a high value-added by-product, and a dietary fiber produced by the method. The present invention comprises a step of liquefying roasted dextrin and a step of adding an enzyme containing α-amylase, β-amylase and maltogenic amylase to the liquefied roasted dextrin to saccharify it.
