abstract | PROBLEM TO BE SOLVED: To provide a method capable of suppressing fading of a carotenoid pigment without using a special container body and without adding a stabilizer or the like which is a cause of causing a texture change, a flavor change, an increase in irritation and the like. A method for suppressing discoloration of a carotenoid pigment according to the present invention includes a preservation step of preserving a dried product of lactic acid bacteria containing the carotenoid pigment in the cells. The method for producing foods and drinks containing carotenoid pigments, functional foods, external preparations, cosmetics, quasi-drugs, or pharmaceuticals according to the present invention is a method for producing a carotenoid pigment in a lactic acid bacterium as a part of a raw material.
