PROBLEM TO BE SOLVED: To provide a fatty acid composition containing a high content of palmitoleic acid and useful as a selective antibacterial agent against Staphylococcus aureus. SOLUTION: Fatty acids at sn-1 and sn-3 are liberated by lipase from fats and oils containing a triglyceride having palmitoleic acid at sn-1 and sn-3, and then the liberated fatty acids are recovered. Thereby, a fatty acid composition containing 55 mol% or more of palmitoleic acid is obtained. [Selection diagram] Fig. 1 |
