The present disclosure relates, inter alia, to processes for improving shelf life and flavor of freshly cut/fresh vegetables and food products produced by these processes. In accordance with the present disclosure, the process generally involves various novel combinations of steps such as blanch, air dry, supercritical fluid processing with and without processing aids, pressurization, depressurization, and packaging. The present disclosure further relates to methods of preparing edible products incorporating processed freshly cut vegetables and food products produced by these methods. |
