PROBLEM TO BE SOLVED: To provide an improved starch thickener dispersible in a liquid so that the liquid can be easily swallowed when a patient with dysphagia drinks the liquid such as milk. A pregelatinized, hydroxypropylated starch having a degree of hydroxypropylation in the range of about 1% to about 10%; and an RVA viscosity in the range of about 400 cP to about 3500 cP; , Pregelatinized, hydroxypropylated starch, wherein the hydroxypropylated starch is readily dispersible in milk.
