abstract | PROBLEM TO BE SOLVED: To provide a method for producing a broccoli processed food capable of obtaining a broccoli processed food containing sulforaphane. SOLUTION: The output of a heater 3 is controlled, and an electromagnetic valve 7 is controlled to be opened/closed to raise an internal temperature of the pressure vessel 2 to 125°C to 149°C, which is an object to be treated contained in the pressure vessel 2. When the broccoli is decomposed, the controller 5 turns on the heater 3 to heat the inside of the pressure vessel 2 and turns off the heater 3 to cool the inside of the pressure vessel 2 so that the water inside the pressure vessel 2 is removed. A method for producing a broccoli processed food using a thermal decomposition treatment apparatus, which controls on/off of a heater 3 and controls opening/closing of a solenoid valve 7 so as to heat and cool along a saturated steam pressure curve without boiling.
