abstract | The present invention relates to a method for producing fermented milk, in which a decrease in fermentation efficiency is improved by suppressing a decrease in vitality caused by low-temperature stress in lactic acid bacteria used as a starter. A method for producing fermented milk comprising a step of inoculating a low temperature raw material milk having a lactose content of 1.5% by mass or less with a lactic acid bacterium and a step of fermenting the raw material milk. The manufacturing method of this fermented milk whose temperature of low temperature raw material milk is 10 degrees C or less. The method for producing the fermented milk, wherein the low-temperature raw milk is prepared so that the lactose content is 1.5% by mass or less by treatment with lactose-decomposing enzyme. Prior to the step of inoculating lactic acid bacteria into the low temperature raw material milk, the method for producing the fermented milk further includes a step of treating the lactose content of the raw material milk containing lactose to 1.5% by mass or less using a lactose-degrading enzyme .
